NTR-1010 Introductory Nutrition

Nutrition 1010 addresses basic information about nutrients and their functions in the body as well as known and hypothesized relationships between diet and chronic disease.

     The course explores the US Government’s dietary guidance system and information appearing on food labels. Scientific evidence is used to evaluate the accuracy of nutrition statements made by the media.

     Students identify the anatomical structures of the gastrointestinal system and the natural processes of nutrient metabolism.

     Students examine their eating habits, lifestyle, and family medical history to determine personal risk factors for nutrition related illness. This course will teach students how to make healthy dietary choices and reduce their risk for chronic diseases.

Course Outcomes
 

  1. Describe the 6 classes of nutrients, their functions in the body, their deficiency, toxicity and food sources.
  2. Relate the importance of nutrition to the prevention of a variety of health problems: cardiovascular disease, diabetes, cancer and obesity.
  3. Compare the nutritional value of eating habits to current Dietary Reference Intake (DRI) recommendations.
  4. Explain the process of digestion and absorption in the human gastrointestinal tract.
  5. Identify nutrition information on food labels.
  6. Evaluate the accuracy and scientific soundness of media statements about nutrition.
  7. Determine the risk for chronic diseases through analysis of various factors.
